No-bake healthy chocolate nests ~ Recipes for Little Ones

A fun, easy treat to make with your little ones and with only a small amount of cocoa powder to sweeten it up, perfect for little tummies. The ingredients are measured out in 'spoons' and ready in 15 minutes, a perfect activity for at home. They are also dairy free and vegan!

Ingredients:

  • 8 tbsp natural peanut butter (any nut or seed butter works great in this recipe)
  • 3 tbsp coconut oil (can substitute for butter)
  • 3 tbsp honey (for vegan version, use maple syrup or can be made without)
  • 1 tsp vanilla
  • 2 tbsp cocoa powder
  • 16 tbsp quick-cook porridge oats (can substitute with other cereals)
  • 3 tbsp shredded coconut  (or you can simply increase the amount of oats by 3tbsp and leave coconut out)
  • Treats to top off the nests - fruit/crushed chocolates/nuts/seeds

You will require baking paper or cupcake cases for this recipe.

Method:

1) Line a baking tray with baking paper or set out your cupcake cases on tray and set aside

2) Add peanut butter, honey and coconut oil in a saucepan and heat until combined

3) Add in the vanilla and cocoa powder, stir until well combined

4) Add quick-cooking oats and mix well

5) Add coconut and stir until completely combined

6 Put 1 tbsp portions of mixture onto your prepared baking sheet or cupcake cases. Press into the shape of nests. Continue until you’ve used all of your mixture.

7) Cool in the fridge or freezer until hardened. Top with your favourite treats

8) Serve cool or at room temperature. Store in an airtight container in the fridge
